Herve is the centre of the Pays de Herve, a rolling plateau in the east of Liège province. On the map the town is small and irregular. Its streets follow ridges and slopes rather than any grid, and a few main roads leave the centre in different directions across the countryside.
The land around it is the region's signature. Its bocage is a patchwork of small fields enclosed by hedgerows, with scattered farms and orchards between them. From above, that becomes a fine network of lanes and boundaries, much more detailed than the open farmland of the Hesbaye to the west. In black and white, the pattern looks almost like lace.
The town gives its name to Herve cheese, a soft, strong washed-rind cheese made in the area for centuries. The orchards also supply the thick apple and pear syrup eaten across the Liège region. A Herve map poster shows a farming landscape that people recognise by taste as much as by sight.

The town centre follows the lie of the land. Its streets bend over the slopes instead of lining up, which gives the map an organic core.
